I Woke up this morning feeling very rested! Aside from the fact that Harry was up very early today to head to the track for a day of testing, so I thought I would try to make some home made Pop tarts for breakfast for Kendall. I absolutely LOVE eating healthy and I have made it a life choice. With that being said, there are definitely times I feel a bit guilty on the mom front not buying the "good" stuff (as Kendall describes it) for her to eat. Like pop tarts, sugary cereal, donuts etc. Yes, once in a GREAt while, like birthday, I will buy the occasional donut, but honestly I can't remember the last time I bought a package of pop tarts. She used to love them. See I have slowly weaned her off of that kind of food and she feels so much better and I know I'm teaching her good habits that can last a lifetime. There are time she comes home from her Dads house and they don't eat like we do. they still eat a lot of the processed food and she will say, "Wow, I feel horrible mom. I know it was from all the junk I ate at Dads". Now that doesn't stop her next time, I mean she is only 11 and after all when I was 11 I wouldn't even touched a lot of the things she eats with me now. So I figure I'm still coming out ahead when it comes to her eating habits. Heres the recipe:
Pop Tarts
1 Pie Crust Recipe ( I used 1 cup flour, 1 cup spelt flour, 2/3 Cup Butter, Water as needed to mix)
Jam or jelly of your preference (I used my own home made Jelly)
2T Powdered sugar
1t almond Milk
1/4 t Almond Flavoring (optional)
Candy sprinkles (optional)
This is so Easy!
First mix your crust ingredients together and roll to about 1/4 thick. then cut rectangular shapes out(I used a plastic container for the shape and as my "cutter")
Next spread your jelly one one of your rectangles
Then top with another rectangle and press the edges together.
I used a fork to "Press" them together
Bake in the oven at 350 degrees or until brown. These look good like this! but wait it gets better!
Mix together the sugar, milk and almond flavoring and brush onto of the cool pop tarts. Then sprinkle with decorating sugar to give it the pop tart feel.
Don't they look good?! Plus they were a big hit. Not quite healthy but definitely healthier than the ones you buy in the store and they help me think I'm not depriving Kendall of anything.
those do look real good Denise! Do you use sugarfree jam? Do you cut all the bad stuff out or just try to eat moderation and make everything homemade vs. store bought? I may have to try these even though cassie can't have. I could try with her gluten free flour and her butter, just not sure of the final product.
ReplyDeleteCassie has lost over 20 pounds in one year. Not bad for a 10 year old. Finding out her food allergies and omitting those from her diet. She feels 100% better. No headaches, stomachaches, bad dreams, pimples etc. Though she does miss some foods for sure. I try to do my best in making similar things we eat but in her version. It makes it hard, but we try. Even the little sister "if Cassie can't have any, I won't either". Don't know how long she keep saying that!
